To cancel an old host without killing mail, leave that account billed until public DNS and your mail clients both use the new setup. The old server is still your rollback, and it still receives mail until MX records and caches finish changing. Cancelling the same afternoon you copy files often costs you messages you cannot get back.
When mail already lives somewhere else
If mail stays at Google Workspace or another provider, the old cPanel box is mainly a web origin. You can cancel sooner once public A and NS records match the new host and you have already previewed the site. Still export anything that landed in the old Roundcube, even if you rarely open it. Catch-all addresses on the old box will not move with you, so rebuild any you still need. Update SPF so it no longer includes the old IP once that server stops sending. Leaving a dead include can cause delivery problems later.
When mail still lives on the old cPanel
Do not cancel just because the website looks correct on the new server. Keep files on both hosts first, preview the site, then change nameservers or A records and watch the web side. If mail is moving, change MX next and watch IMAP until clients settle. Export each mailbox with an IMAP sync or a zip before the old host has any reason to delete data. If people keep downloading from the old server after MX flips, they split one mailbox across two places. Freeze new use on the old side, finish the copy, flip MX, then point every client at the new hostname.

An MX record still aimed at the old IP after that account is gone usually means the mail is gone unless the old provider can still export it. A new A record only moves the website. Web and mail often share one cancel on shared plans, but you can keep them together on purpose or split them on purpose. Do not split them by accident when you cancel too early.
How long to keep both hosts
Keep both accounts active through the overlap, from a few hours up to a couple of days, not the same afternoon. Confirm MX and A with dig, then confirm that mail clients open the full folder list on the new host. LiteSpeed response headers only tell you about the website path. They do not prove mail has finished moving.
